Pancakes are a delicious morning or brunch treat. We wanted to make a super healthy version, with NO white flour or sugar. Instead, our pancake mix features a blend of Buckwheat Flour, Coconut Flour, Organic Flax and Chia. Why Buckwheat? Well, it’s a nutrient packed ancient seed with a beautifully sweet nutty flavour which works great in pancakes.
Why is it such a nutritious powerhouse? For starters it has a very high quality protein containing all 9 essential amino acids that support energy, growth and muscle synthesis. Buckwheat also has a high fiber content and is a source of Iron, Viatmin B-6 and Magnesium. If that isn’t enough, the antioxidants quercetin and catechin in green tea and red wine are also found in Buckwheat.
Surprisingly, it’s actually not a grain or in anyways related to wheat. This means it is naturally Gluten Free and ideal for people with gluten sensitivities.
All you need is:
– 1 Banana
– 1 Egg (or a chia egg – mix 1 tbsp. chia seed to 3 tbsp. water)
– 140ml Milk (of your choice… dairy, almond or otherwise)
Instructions:
1. Mash a banana with a fork in a large mixing bowl
2. Add the egg & milk. Mix well
3. Pour in half this mix. Stir
4. Cook on oiled pan at medium heat
