Warming Spinach Dhal
You’ll be surprised you never made Dhal before. It’s really easy to make and super healthy – great for a cold evening! The great thing is that every supermarket has lentils… I’ve been passing them by for years until I discovered what to do with them!
Ingredients (Serves 4):
250g x red split lentils
100g x fresh spinach leaves, shredded
1 x tin of chopped tomatoes
1 x tbsp coconut oil
1 x red onion, finely chopped
2 x garlic cloves, crushed
1 x tsp fresh ginger, grated
1 x red chilli, finely chopped
3 x tsp curry powder
1 x tube Chilli Picante ProMix (55g)… or x2 if you want more protein.
3 x spring onions, finely chopped
800ml x stock (veg or chicken)
Salt & Pepper to season
Method:
1. Heat the oil in a wide-based pan with a tight-fitting lid. Add the onion and cook over a low heat for 5-10 mins, stirring occasionally, until softened. Add the garlic, ginger and chilli, cook for 1 min, then add the curry powder and cook for 1 min more.
2. Turn up the heat to medium. Tip in the lentils, chopped tomatoes, stock and some seasoning. Bring the liquid to the boil, then reduce the heat, cover and cook for 20 mins or until the lentils are tender.
3. Taste and adjust the seasoning, then gently stir in the spinach and Chilli Picante ProMix. Sprinkle with the chopped spring onions to serve and a dash of Chilli Picante on top too if you like… and a spoon of natural yogurt is nice too. Great with rice, naan, quinoa or even just by itself or as an accompaniment to steamed fish or steak.
Top Tip: Freeze or refrigerate the leftovers… they make a great healthy lunch option!
