Pomegranate and Mango Moroccan Spiced Quinoa
Ingredients (Serves 4):
1 x cup Quinoa (150g)
1 x pomegranate, deseeded
1 x red pepper, deseeded and chopped
3 x tsps curry powder
1/2 x lime, squeezed
1 x tbsp Coconut oil
2 x refill tubes of Mango ProMix
Salt & Pepper, to season
1. Boil a pan of water and cook the quinoa as directed on the packet.
2. Meanwhile, prepare the pepper and pomegranate. Here’s how to do it:
3. Once the Quinoa is cooked, drain any remaining water and stir in a spoonful of melted coconut oil.
4. Chuck in the rest of the ingredients and stir well. Season with salt & pepper and serve! Add some fresh mint leaves if you have them handy!
