Peanut Bites
Nutty little bites of joy 🙂
Ingredients
- 35g vanilla protein
- 60g oat flour
- 150g peanut flour (added extra)
- 2 eggs or flax eggs
- 60ml almond milk
- 230g unsweetened apple sauce or banana
- pinch of salt
- dash cinnamon
topping
– 10g cocoa powder
– 90ml almond milk
– 60g melted chocolate chips
Method
Preheat the oven to 180c convection bake. In a large bowl, add protein, oat flour, peanut flour, salt, and cinnamon. Mix.
Now add eggs, almond milk, and unsweetened applesauce or banana. Gently stir together until a smooth batter forms.
Spray a 8×5 inch loaf dish with nonstick spray. Pour batter into the dish. Bake at 180c for 20 minutes. The center should still be slightly underdone and the edges should be set.
For chocolate layer, Add cocoa powder and almond milk to a bowl. Whisk together until a smooth sauce forms.
Heat chocolate chips in the microwave for 1:00-1:30, stirring every 30 seconds. Add melted chocolate to the chocolate layer mix. Stir until smooth and combined.
Pour chocolate mixture over top of the bars.
Place in the fridge to cool for 30-40 minutes before cutting. Cut into 8 bars and enjoy!
