Easy Patatas Bravas

Ingredients (4 Servings):

4 x Medium Potatoes – peeled & cut into cubes (approx 600g)
2 x tbsp Olive Oil
Salt & Pepper to season
 
For the Sauce:
2 x tbsp Olive Oil
1 x small onion, finely chopped
2 x cloves of garlic (crushed)
1 x splash of soy sauce
1 x tin of chopped tomatoes (400g)
2 x tbsp Wyldsson Chilli & Smoked Paprika Nut Butter
Juice of half a lemon
50g Wyldsson Chilli Picante ProMix

Method:
 
1. Preheat the oven to 200C / gas 6 / fan oven 180C. Spread the potato cubes into the a baking tray and toss in 2 tablespoons of olive oil, then season with salt and pepper. Roast for 40-50 minutes, until the potato cubes are crisp and golden.
 
2. Meanwhile, heat the olive oil in a pan, add the onion and warm on a low heat for 5 minutes until softened, then chuck in the garlic and soften (but not burn!).
 
3. Add the tin of tomatoes and Wyldsson Chilli and Smoked Paprika Nut Butter to the pan. Bring to the boil, stirring well until the nut butter has melted through, and then simmer. Add a good splash of soy sauce and season to taste with salt and pepper
 
4. Tip the roasted potato cubes into the tomato sauce and stir well
 
5. Serve with a squeeze of lemon juice, some chopped fresh parsley and sprinkling of Chilli

Optional: Can make a healthy Aioli sauce! Crush a clove of garlic (make sure it’s crushed into really small pieces), add a squeeze of lemon juice to some greek yogurt and mix well. Season to taste with salt.
